tasty Coffee crumble cake for every one

Coffee Crumble Cake - A coffeelicious cake to kick start this lockdown week 😋 


If you’re getting on to the baking bandwagon again, this ones for you!! Made from all at home ingredients and perfect for your tea time binge😍

Recipe:


Ingredients: 

For the crumb : 


1/2 cup butter 

1 cup maida 

1/4 cup brown sugar 

1/2 cup white sugar

1 tsp cocoa powder 

1/2 tsp cinnamon powder 

1/2 cup crushed nuts (walnuts cashews)

A pinch of salt 


For the cake base : 


2 1/4th cups all purpose flour 

1 1/4 cup sugar 

1/4th cup cocoa powder 

1/2 cup oil 

1 cup yogurt 

1 cup black coffee (2tbsp coffee 1cup warm water)

1tsp baking soda 

1 1/4 tsp baking powder 

3/4th tsp salt 

1tsp cinnamon 

1 tbsp cornflour 

1 tsp vanilla essence 

3/4th cup choco chips 2 tsp flour 


For the glaze : (melt)

1/2 cup white chocolate 

1/4 cup milk 


Method : 

For crumbs : In a large bowl, mix all the ingredients well untill it forms a sand like texture. 


For batter : In a bowl beat yogurt, oil and sugar untill smooth. Add coffee and mix well. Add all the dry ingredients and mix well. Lastly fold in flour coated choco chips and vanilla essence. 


Pour the batter in a lined cake tin and cover it with the crumb. Press it gently and spread it evenly. Bake it In a preheated oven at 180 degrees for 35-40 mins. 


For the glaze : Melt white chocolate and milk together. 


Cool the ready cake completely and pour some glaze while serving!
