Bruschetta with tomato and creamy paneer spread


Brushchetta( pronounced as brusketta) is my summer favourite! Nothing screams better to me than brushchetta during this time of the year. It is an italian dish having a crispy bread as base and toasted with veggies mainly tomatoes and basil. This starter has come a long way and its preparation and serving has evolved a lot with time. This dish is perfect for parties,gatherings, meets or get together. Be it kids or elders , it is liked by every generation. 

So yesterday I made this appetizer with a healthy creamy spread and everyone cherished it so much...Turned out to be a super hit recipe.

INGREDIENTS

FOR THE TOMATOES

2 tbsp. extra-virgin olive oil

2 cloves garlic, thinly sliced

3 ripe tomatoes, diced

Dried basil / oregano 

salt (According to taste)

Chilli flakes 

Bread loaf (French bread or any other as available in the market)

Black pepper

FOR THE Spread

1/2 cup  paneer (you can use homemade paneer also)

Coriander 

1 clove of garlic

salt (According to taste)

Half teaspoon lemon juice 

Mayonnaise 


METHOD

1. Let's start with the spread.

Make a paste of paneer, 1 garlic clove, coriander, mayonnaise , salt  , lemon juice and blend it together. 

Your spread is done. So easy right?

The spread looks so beautiful and presentable. 

2. Now it's time for the topping. 

In a mixing bowl add tomatoes, garlic ,olive oil , dried basil and salt. Mix it all together and  microwave it for a minute. 

3. Take your bread loaf  and slice it diagonally.

Now grease the bread with olive oil and both the sides of loaf. On a hot pan cook it from both sides (make sure it is cooked until crispy).

Pro tip: Take one clove of garlic and just rub it on the loaf . This adds a nice smell of garlic to the bruschetta. 

4. Next add the spread to the loaf and over it our freshly made tomato  topping.

It's ready and now you can enjoy that delicious starter.

This recipe is famous because of its simplicity and the ease of making it with al the ingredients being present at your home. It is seriously a swoon worthy recipe and a must try for this season. It is actually one of the enjoyable and high quality but affordable dish that it is found in the menu of every Italian and even American cafes or restaurants.  Ofcourse a lot of variations can be made in this recipe to make it more delicious like you can add vinegar,onions may be spring onions, diced mushrooms ,cheese, bell peppers, olives (green or black)and lot more things.

Tips that help you:

1. Melted butter can act as a substitute of olive oil. If you are using olive oil make sure it is of a good brand as it enhances the taste of the dish.

2. Bread can be toasted in a toaster or an oven or otg too. (Pre heat oven at 450°F)
