How to make Cucumber kachori?

Cucumber is good for health, it can be consumed in many ways. You can eat raw cucumber as salad or you can prepare a healthy drink out of it. Today I am glad to share a mouth watering snacks item made of Cucumber made by my Mother in Law. My mother in law (Mrs. Rekha Jain) is a great cook, she loves cooking and prepares variety of dishes for us. I am writing this recipe on behalf of her. So lets get started.

Cucumber Kachori

Prepare time : 30 to 45 minutes

Cooking time: 45 to 60 minutes

Ingredients:

For Stuffing / Filling:

500 gm Cucumber

250 gm Yogurt

2 Tbsp Roasted Cumin Seeds Powder 

1 Tbsp Cinnamon Powder 

1/2 Tbsp Black Salt 

1/2 Tbsp Salt

1 Tbsp Red Chilli Powder 

2 pinch Asafoetida powder - Optional

For Dough

2 cup all purpose flour  

1 cup semolina 

Salt as per taste

5-6 spoon Oil 

Cucumber Water instead of normal water

For Frying

Any Oil of your choice and as per requirement.

Now let's start preparing

First we will prepare Stuffing / Filling

1) Wash & Peel the cucumber than grate the cucumber.

2) Remove excess water from the grated cucumber. You have to remove water as much as possible.

Tip: You can use cotton thin cloth and squeeze excess water from cucumber. If you don’t have cloth readily available, you can use your palm to remove water from the cucumber.

Note: We have removed the excess water from hands only.

Don’t throw the excess water, it will be used in preparing dough for kachori.

3) Tie Yogurt in thin cotton cloth to remove excess water. You can even use steel strainer / sieve to remove water.

Note: We have used steel strainer to remove water, we have kept yogurt in strainer for almost more than an hour until the water is drained.

4) Once the grated cucumber and yogurt are completely drained, take it in a bowl and mix it well.

5) Than Add


2 Tbsp Roasted Cumin Seeds Powder 

1 Tbsp Cinnamon Powder 

1 Tbsp Red Chilli Powder 

2 pinch Asafoetida - Optional

Mix all the ingredients, well and keep it aside.

NOTE: Salt and Black Salt will be added later when we are ready to assemble kachori. If you will add with all the ingredients the stuffing will become very thin or watery and it will easily come out while frying.


Now lets move on preparing dough.

1) Take 2 cup all purpose flour in a bowl.

2) Add 1 cup semolina, Salt & 5-6 spoon Oil

3) Mix all ingredients properly, Oil should be mixed properly, it should form a ball while mixing, if it’s not forming a ball, use more oil.

4) Instead of normal water use cucumber water which we have squeezed out from grated cucumber. You have to add water slowly slowly, dough should be tight / stiff. 

Note: Don’t use excess water, just use enough to make the dough come together.

5) Once the dough is ready, keep aside for at least 20-25 minutes. Cover it with a cloth or store in airtight, so it doesn’t dry.


Now let's start assembling the kachori

1) Make small balls from the dough, now roll the dough using rolling pin, roll it like puri’s. For one kachori 2 puri’s are needed.

Tip: You can roll large amounts of dough and use cutter to make in same shape.

2) Add Salt and Black Salt to the Stuffing before filling.

3) Take 2 spoon (or as per your requirement) of stuffing place it in the center of a puri than cover it with other puri, than tie the ends using your thumb and first finger using a little water at the ends. Prepare all the kachoris in the same way.

Note: You have to tie the ends properly, so while frying it doesn’t open or break.

4) Take Oil (As per your requirement) in a Frying Pan. Deep Fry the kachoris on slow flame till light brown.

Note: Gas Flame should be slow, for good results

5) Your kachoris are ready, Server with tomato Souce, Emli chutney or green chutney.

Note: Kachoris become more tasty the next day. You can enjoy this kachoris for 2 days.

It’s a bit time taking recipe but the satisfaction are worth the efforts.
