Aamrakhand - Shreekhand with the goodness of mangoes
Being a sweet-tooth I always crave for some mildly sweet desserts..Yes you heard it right! I prefer mildly sweet items in desserts and the sole reason behind it is when you add extra sugar or make a dessert over sugary , the real taste of that dessert gets over-powered by sugar..
Also we need to cut-off our sugar intake as over consumption of the same leads to a lot of diseases and metabolic disorders..
Also you can use alternatives like honey, jaggery, brown sugar etc for sugar but these days , considering the adulteration people do to make petty profits, you can't really rely on these sugar alternatives to a large extent until and unless you've been using a brand since years and have trust for it..People can also use sugar free for diabetic patients..
To be honest whenever I try to make a sweet recipe , I prefer to give it natural sweetness..Fir example , mango season is going on and mangoes have their own natural sweetness and that isn't bad for health..So I flavour the sweet recipes with mangoes and don't add any extra sugar..Even if I have to add, I prefer adding it in extremely small amount as the sweetness is already well compensated my the natural sweetness of mangoes..
So few days back I made this "hung-curd dessert" that is known as "Shree-khand"..Since I used mangoes in its preparation, I will call it as "Aamrakhand"...It's extremely easy to make , have mild sweetness and doesn require a lot of ingredients..
Ingredients required: single serving :
1. Hung curd {200 gms}
2. 1 big mango {make a puree out of it by blending it in a blender}
3. Powdered sugar {2 tsp or as per your preference}
4. Saffron strands
5. 2-3 tbsp of milk{in which you will dissolve saffron strands}
6. Cardamom powder
7. Nuts {sliced almonds, pistachios}
Mathod
● Take a big bowl and put a strainer on it
● Now spread a muslin cloth or cotton handkerchief on the strainer
● Now pour your curd in this muslin cloth/handkerchief {prefer using thick curd with less water content} and roll it to strain out extra water..Cover the curd from all sides by making a knot in handkerchief
● Let the curd loose water for 4-5 hours, preferably overnight..You can put a heavy weight utensil on this cotton handkerchief/muslin cloth or you can simply tie this handkerchief with curd around your kitchen tap overnight..All the water from curd will drop out gradually..
● So in this way our hung curd is ready..
● Now take a mango, peel off , cut it into pieces and blend it in a blender into a smooth fine and thick paste..
● Now empty this mango puree in a pan and let it simmer for 4-5 minutes till the water content is absorbed a bit from the puree
● Now in a bowl , add hung curd and this mango puree..Whisk it well...
● Now add saffron strands soaked in milk to it..You can adjust milk quantity to bring out the consistency of shreekhand as is visible in the picture..
● Add powdered sugar , cardamom powder and sliced nuts to it and mix everything well..
● Finally take it out in a bowl and garnish it with some more nuts.
Now Aamrakhand is ready..
